Unlike general-purpose bench chisels, which are optimized for flat surfaces and produce shavings, carving chisels and gouges are built for curved cuts, detail work, and material removal in confined spaces. The distinction matters because the design trade-offs are different. A carving gouge must be thin enough to follow a curved path without binding, yet strong enough not to crumple when struck with a mallet or pressed by hand.
