This simple definition separates cakes and dessert bars from three adjacent categories: bread (which relies on yeast fermentation and gluten development for structure), cookies and shortbreads (which are shelf-stable for weeks or months due to low moisture), and frozen desserts or confections (which require refrigeration or specialized storage). The distinction matters because formulation, production workflow, equipment choices, storage strategy, and business model all follow from this fundamental difference.

At their core, cakes and dessert bars are emulsions. Fat (butter, oil, or sometimes eggs) is beaten or creamed with sugar to trap air and incorporate moisture, then combined with flour, leavening agents, and liquid to create a batter. This batter bakes into a crumb matrix held together by gelatinized starch and coagulated protein, with pockets of air and fat distributed throughout. Dessert bars often use a simpler approach—a fat-and-sugar base combined with flour to form a dough or dense batter—but the result is structurally similar: a stable crumb with a moisture level that keeps the product tender and moist but not wet.
