Beets are the swollen storage root of Beta vulgaris subsp. vulgaris, a biennial plant in the Amaranthaceae family. In the first year, the plant directs its energy into producing a large, fleshy root and a rosette of leaves. If left in the ground through a cold period and then exposed to warmer temperatures, the plant bolts, sending up a flower stalk to produce seed, and the root becomes woody and unpalatable. For commercial production and consumption, we are almost always harvesting that first-year root, which is essentially a nutrient and energy storage organ.
Understanding this basic biology is not academic trivia; it directly explains the quality changes you see in the store and the field.
