Chapter 1: Understanding Beer Brewing Grains & Malts
Beer is fermented grain. Everything else—hops, yeast, water, time—builds on the foundation that grain provides. The grain you choose determines the sugars available for fermentation, the color and clarity of your finished beer, the body and mouthfeel in the glass, and the consistency of results from batch to batch. Understanding what grain is, what happens to it before it reaches your brewhouse, and why that matters is the first step toward brewing with intention instead of accident.
What Is Brewing Grain, and Why It's Not Just Cereal
Brewing grain starts as the seed of a grass plant—usually barley, but also wheat, rye, oats, or corn. That seed contains a starchy interior (the endosperm) surrounded by protective layers, with a small embryo at the base. A brewer cannot use raw grain as it sits in the field or in a grain silo. Raw grain contains starch—long chains of glucose molecules locked together in a form that yeast cannot ferment. Raw grain also contains enzymes, but those enzymes are dormant, like a battery with no charge. The job of malting is to wake those enzymes up and let them break down the starch into fermentable sugars before the grain reaches your brewhouse.
Malting is a controlled germination. A maltster soaks raw grain in water, allows it to sprout for a few days (usually three to seven, depending on grain type and desired result), then halts the germination by heating the grain to a specific
