Chapter 1: Understanding Amaranth
Amaranth is not a single grain, despite how it is usually labeled and sold. It is a group of plants in the genus Amaranthus, and only three species are cultivated primarily for their edible seeds: A. hypochondriacus, A. cruentus, and A. caudatus. These are not the same as the amaranth grown for leaves, nor are they the same as the ornamental varieties sold for flower beds. Understanding this distinction at the outset is not pedantic trivia; it has direct, practical consequences. The three grain species differ in yield, protein content, popping quality, seed size, and, most importantly, in how they behave when you cook them or mill them. If you purchase a batch of "amaranth seed" based only on that generic label, you may be buying any one of these species, or a mix, and your process will need to accommodate that.
Botanically, amaranth is a dicotyledonous plant, which makes it technically a pseudocereal rather than a true cereal grain like wheat, rice, or oats. Real cereals are monocots - grasses. Amaranth is a broadleaf plant. This distinction is more than academic because it changes how the seed is structured and therefore how you process it. In true cereals, the bran, endosperm, and germ are organized in distinct layers that are mechanically separable, which is how you can mill wheat into white flour.
